Happy Mother’s Day everyone! Remember, every day we should be appreciating our mother’s =D. This year for mother’s day my family and I decided that we should just cook dinner at home. We decided to have a Vietnamese hot pot style dinner, but instead of a soup base hot pot, we decided to cook up a tamarind sauce to cook our meats and seafood in. We also bought a good amount of lobster in which we stir fried in a spicy paste sauce.
The tamarind sauce is an acquired taste. Not everyone is going to like it, especially for those of you who do not like tangy sauces. The tamarind sauce is extremely simple to make as you only need to combine a tamarind sauce and sugar in a saucepan and bring it to a boil. You can basically buy any type of beef; just make sure it’s thinly sliced. We also bought shrimp and squid to cook in the hot pot.
For the Lobster:
We bought our lobster at Costco and then chopped it into smaller chunks. We dusted the lobster with all purpose flour and a little bit of cornstarch.
We then filled a wok with oil to fry the lobster.
After the lobster is fried, we threw in shallots and garlic and sautéed it. Afterwards dump the lobster back in and stir in the sauce.
For the sauce we used: crab paste, soy sauce, oyster sauce, various spices (your choosing), and sugar. At the end I threw in some ginger and topped the dish off with green onions and cilantro.
